Passionate and Outgoing Executive Chef for a Dynamic Danish Beach Hotel in the Top of Denmark
Would you like to lead a kitchen where quality, sustainability, and the guest experience are top priorities? Are you driven by both day-to-day operations on the floor and strategic leadership responsibilities? If so, you might be our new Executive Chef.
We are looking for a dedicated Executive Chef who will take full responsibility for our kitchen. The position involves being “on the floor and close to the guests.” You must enjoy balancing the practical aspects of the job with administrative and financial responsibilities. You will be a key member of the hotel’s management team. You will work closely with the hotel director and the other department heads.
Your primary responsibilities:
Day-to-day operations and management
- Ensure smooth daily operations and a positive work environment in the kitchen
- Manage and assign daily tasks on the shop floor
- Be responsible for catering for à la carte dining, conferences, and private events in close collaboration with the restaurant manager from Restaurant Plesner and the F&B manager from Maskinrummet
- Handle the procurement of raw materials and related products
- Ensure that the kitchen, dishwashing area, storage room, and loading dock are always tidy and presentable
Concept, Administration, and Finance
- Develop a varied and sustainable menu, as well as an à la carte menu, featuring classic Nordic cuisine that complements the classic seaside resort charm
- Ensure high food safety standards and maintain the eSmiley program
- Create work schedules and adjust shifts in case of illness
- Be responsible for the kitchen's payroll expenses, gross profit margins, monthly reports, and inventory lists
- Plan guest flow (hotel guests vs. à la carte guests) and discuss strategies for optimization and action plans in the event of a revenue shortfall
- Develop an annual calendar of activities in collaboration with the sales department
Human Resources Management and Culture
- Coach, motivate, and train the employees in the department
- Conduct annual performance reviews
- Recruit, hire, and terminate employees in consultation with the hotel manager

We expect you to:
- Has solid experience from a similar position in the hotel or restaurant industry
- Is a visible leader who takes the lead and motivates your team with enthusiasm and a positive attitude
- Is organized and can seamlessly incorporate administrative tasks into a busy workday
- Has a solid understanding of finance and knowledge of cost calculations, inventory management, and shift scheduling
- Stays up to date on industry trends and is passionate about sustainability in the food service industry
